Quinoa with Apples & Pears

Did you know that quinoa is one of the most protein-rich foods we can eat?! It is often assumed to be a carb based meal, but this supergrain is  loaded with protein, iron, lysine (great for tissue growth and repair!), magnesium, manganese and high in Riboflavin (B2 = improved energy and metabolism!)

If you love oatmeal in the morning, but need more protein or are looking to switch up your egg based breakfast this easy recipe will last you a few mornings and leave you feeling energized and satiated!

Ingredients:

1 cup red quinoa (Ancient Harvest Brand is great!)
2 sweet apples
3 ripe pears
1/2 cup raisins
2 cups water

Instructions:
1. Wash the quinoa thoroughly so that any remaining bitterness will be washed away. (Originally, I thought this was a dramatic step, but it totally makes the quinoa taste better, try it! ) Rinse the quinoa in a fine mesh colander and rinse in running water or soak in water and then drain. Rub the seeds with both of your hands during the rinsing process.
2. Slice the apples and the pear (optional).
3. In a medium saucepan, boil the quinoa with 2 cups of water. Reduce to a simmer and add the chopped apples, pears and raisins, cook for 20 minute or until the quinoa is done.
4. Shortcut: Substitute frozen berries for apples and pears, mix in with 10 minutes remaining or add fresh berries and mix in with 5 minutes remaining!
